Preparation of Abu Kass chicken rice


  • A kilo of Abu Kass rice.
  • Chicken cut into four pieces.
  • A tablespoon of curry spice.
  • Two tablespoons of vegetable oil.
  • Four cups of water.
  • Chopped onion.
  • Sprinkle with cinnamon.
  • a tablespoon of salt.

how to prepare

  • Put the chicken and oil in a saucepan, season with cinnamon, curry and salt, put the onions on it, stir over the heat, then add water until it submerges and let it on the stove for half an hour, then remove the chicken pieces from the soup and put them in another saucepan.
  • Put the oil in another pan, add the Abu Kass rice to it, stir gently for five minutes, then add it to the aligned chicken in the pan, cover it with water, leave it on the fire for 30 minutes, turn the pan into a serving dish, and decorate with fried almonds and cashews.

Kabsa with Abu Kass rice


  • Four cups of Abu Kass rice, soaked in lukewarm water for 15 minutes.
  • Chicken cut into eight pieces.
  • One onion cut into wings.
  • Vegetable oil.
  • A tablespoon of Maggi powder.
  • A teaspoon of cumin.
  • Five cardamom seeds.
  • Sprinkle with cinnamon.
  • Little spoon of salt.
  • Two lomi (dry lemon).
  • Three hot or mild green pepper pods, to taste, chopped.
  • two large spoonfuls of lemon juice.
  • A cup of tomato puree.
  • A finely chopped onion.

  • Put the chicken in a saucepan, add the maggi, half a spoon of cumin, a pinch of cinnamon, salt and a winged onion, put water on it until it is covered and let it over the heat for an hour, then arrange the chicken pieces in a tray, brush with vegetable oil, and sprinkle with spices according to Desire, and brown in the oven, while the soup is left aside to be used in the cooking Abu Kass rice.
  • Fry finely chopped onion with chopped green pepper with a tablespoon of vegetable oil, then add the resulting chicken soup, but it must be strained.
  • Add a cup of tomato puree to the soup water, the lumi pods, cardamom, remaining cumin and lemon juice, and let these ingredients boil, then add the previously soaked Abu Kass rice, and the rice must be immersed to become a centimeter higher than the level of the rice, and leave for thirty minutes on the fire, then it is ripened, and placed in a serving dish, and the chicken is described on its surface.

daqoos sauce


  • Two tomatoes.
  • A clove of garlic.
  • Four veins of mint leaves.
  • Half a cup of water.
  • Two tablespoons of olive oil.
  • Two tablespoons of lemon juice.
  • A tablespoon of tomato puree.
  • Small spoon of salt.
  • teaspoon of hot pepper.
  • Half a teaspoon of spices.

how to prepare

  • Wash the mint and tomatoes well, then put them in the blender until we have a smooth tomato juice.
  • Add the garlic cloves to the sauce and mix well.
  • Put the tomato puree mixture in a saucepan over medium heat.
  • Add the quantity of water and tomato puree and mix the mixture well.
  • Add the rest of the ingredients and mix well until the sauce begins to boil and thicken.
  • Serve the daqoos sauce with rice.
