Basmati rice is one of the well-known dishes in Arabic cuisine, and it is a rice dish of many types, but recently the most used type of rice is basmati rice, which is characterized by the length of its grain, and is also characterized by being light on the stomach; It does not contain as much starch as other types of rice.

Prepare the yellow basmati rice


  • A cup of basmati rice.
  • A teaspoon of Maggi powder.
  • tablespoon of butter.
  • Salt, to taste.
  • Cinnamon sticks.
  • A pinch of cinnamon.
  • A pinch of mixed spices.
  • Half a teaspoon of curry.
  • Three cloves.
  • A tablespoon of turmeric.
  • Two cups of water.

  • Wash the rice well, then soak it in lukewarm water for twenty minutes.
  • Put the pot on medium heat, put the butter and stir until it melts completely, then add the cinnamon, cloves, maggi, salt, spice mix, curry, turmeric, the cinnamon sticks and stir well, then add the rice after straining it from the soaking water, and stir so that the seasoning is distributed over the entire quantity of rice.
  • Pour two cups of water over the rice and leave on high heat until it begins to boil, then reduce the heat to medium and leave on for fifteen minutes.
  • Pour the rice into a flat serving dish, and half the chicken pieces on the surface.
  • Fry some nuts and decorate the rice dish with them.
  • You can add a few lemon slices and parsley sticks for decoration.

Prepare the chicken with basmati rice


  • Chicken cut into four pieces.
  • A teaspoon of curry.
  • A quarter of a spoonful of (cinnamon, cumin, spice mix and ground cardamom).
  • Salt, to taste.
  • Three tablespoons of vegetable oil.
  • Finely chopped onion head.

  • We put the oil in a frying pan, then add the onions, then put the chicken pieces and stir well until they turn white.
  • Add the spice mix, curry, cumin, cinnamon, cardamom and salt, and mix well with the chicken pieces.
  • We add water until the chicken pieces are completely submerged, and we leave it on high heat, and when it begins to boil, we reduce the heat and leave it for forty-five minutes.
  • We take out the chicken pieces and arrange them in a tray, then brush the pieces with vegetable oil, sprinkle both the paprika and the spice mix, and put them inside the oven to brown them and acquire a golden color.

Basmati rice with raisins


  • Two cups of basmati rice.
  • ½ teaspoon of saffron.
  • Two tablespoons of rose water.
  • Three tablespoons of ghee.
  • The cinnamon stick.
  • A teaspoon of cumin.
  • Winged onion.
  • Two teaspoons of salt
  • Three tablespoons of sugar.
  • A quarter cup of raisins.
  • Carrot, cut into thin sticks
  • Four cups of hot water.
  • Two tablespoons of lemon juice.

  • Wash the rice well and soak it in water for fifteen minutes.
  • Soak the saffron in rose water.
  • Melt the ghee, add the cinnamon and cumin, and stir until the aroma of spices appears.
  • Add onions and stir until softened.
  • Add the sugar and stir until lightly golden and caramel.
  • Add the raisins and stir until the raisins puff up.
  • Add the carrots and stir until they mix with the ingredients and wilt a bit.
  • Drain the rice from the soaking water and add it to the ingredients in the pot.
  • Salt and gently stir the rice.
  • Add water and stir gently.
  • Leave the pan on high heat until the water boils and the rice grains absorb most of the water.
  • Add the lemon juice and saffron without inverting the rice, reduce the heat, cover the pan and leave the rice over low heat for twenty minutes until cooked.
